Option 1: Wangan Sensou / Desert War (NMK - 1995) - Arcade/MAME

This game has completely different beginner / normal / expert courses and is a whole lot of fun.
Each stage has a different objective (e.g. rescue 10 characters, take down an enemy boss, etc).

Option 2: P-47 Aces (NMK - 1995) - Arcade/MAME

Classic horizontal shmup with an amazing soundtrack. NMK's last game.

Option 3: GG Aleste 3 (M2 - 2020) - Switch/PS4

Brand new addition to the GG Aleste series created by M2 and headed by Manabu Namiki. Really sweet new Game Gear title.

Option 4: Rapid Hero (NMK - 1993) - Arcade/MAME

You can basically think of this as Thunder Dragon 3 in space. Awesome vert shmup with a cool samurai / mech boss.

The later NMK games are obscure but VERY rad.

Each of these games has music composed by Manabu Namiki, my favorite arcade music composer.

Namiki started with NMK then later went on to make iconic music for Cave and now M2.

Rapid Hero is the only one I've played at a friend's house. Pretty rad, no frills kind of shooter. P47 looks interesting. Never played Desert War.

I think I'll try to fire something up on ole emulator being proceeding with a vote.

So far leaning on Rapid Hero.
