What is the recommended PSU for this version of the AES? Is there an equivalent on Amazon? And is a step down transformer recommended?

Replaced many old unregulated power supplies with them. Good price and good quality. Highly recommended. Don't bother with a step down converter. Just buy a new regulated one for your region.

Barrel Plug 5.5/2.1, DC 9V, 1.5A, inner negative/outer positive

You can use higher voltage, at the expense for more heat inside which is bad for the components, 9V is plenty for the switching regulator in the AES.
