Hello everyone, welcome to the ng.com cooking thread. The general idea is to post recipes that you made, enjoyed, and wish to share with the rest of us. Hopefully we can come up with some good shit that everyone else will want to cook! I will start below.

Lolifox's beans and rice:

Ingredients:

2 tablespoons olive oil (I use more because grease is awesome)
1 Large onion
2 tomatoes or a can of diced tomatoes that has been drained
4 cloves of garlic, chopped or minced
8 cups of cooked black beans (I use 4 of the 1lb cans) washed
2 teaspoons cumin
1/4 cup cilantro chopped
1/4 cup parsley chopped (I sometimes skip this and just dump in more cilantro)
Salt and pepper to taste post cooking
Lemon juice from at least a half lemon
Rice, any kind, probably make minimum 2 cups uncooked for this

Cooking:

Got the loot? Good. Set the rice going, and prep your ingredients

Once all the prep is in order and the rice is cooking, get out a skillet/saucepan/whatever and throw in the olive oil. Begin sauteing the onion, tomato, and garlic in there. Get it going until it starts to get saucy.

Sorry for the shaky cam, I drink heavily while cooking. Once its saucy, add in the cilantro, parsley, lemon juice. Let it cook for just a moment.

Add in the beans. Stir it all up and cook until it melds and the beans are hot.

Turn off the heat, and serve it up with rice and your favorite beverage. Goes great with condiments, add some ranch for zest or sriracha for zing. I cook mine with jalapeno.

Serves at least 6 people, there is seriously a ton. Freezes well, you can wrap it in a burrito on a reheat, fry up the rice with egg then add the beans. Hope some of you enjoy this.

I made this last week and it turned out pretty great. I added some in with scrambled eggs one morning and had a delicious breakfast burrito.

My pad thai recipe covered in crushed peanuts. I'm not planning on making this for a while, so that picture is all this thread gets for now. I should warn you I never measure anything, but I've never had bad results, always magical and unique.

Ingredients:

Rice noodles
tamarind soup base
sugar
garlic
garlic powder
tomato
bean sprouts
chili powder
vinegar
tofu (extra firm)
peanuts
peanut butter
green onion
sriracha
lime
Cillantro

Soak the noodles for an hour or so. Break them in half if you feel like it. Chop the tofu into little triangles and press the water out. Also, crush some peanuts while you're at it. They will be used for the sauce and as a topping.

Mix the sauce in the biggest bowl you have. The secret is to use way more sugar than anyone realizes they're eating :D If it looks like a scene from Scarface you're on the right track. Now add the tamarind soup base, I got mine at 99 Ranch. Add crushed peanuts, a little vinegar and Sriracha. Peanut butter, but not too much. Chili powder, garlic powder, crushed garlic. Fill the sucker with water and stir it til its consistent and liquidy. I'm pretty sure the cilantro is a part of the sauce as well so chop it up and toss it in.

Pan fry the tofu, or deep fry it if you mean business.

In a big pot, toss a chopped up tomato in , followed by a bag of bean sprouts, the green onions, and the tofu. Golden brown or however you like. Then toss in the liquid juicy sauce. Remember, the sauce is THE BOSS. Toss in the rice noodles and crank your stove on high. Stir it consistently for probably like 10 minutes. You'll be cooking out the water and instilling the flavor into the noodles. It will solidify a good bit as it cools.

Serve on a green plate and top with crushed peanuts to taste. You're going to want a lime to squeeze too I'm sure.
