If you already own a good arcade stick for the last or current gen:

That's dope. If I didn't have a MC Cthulu in my ps3 stick, and a ps2 cable, I would for sure recommend that route.
Those Brook adapters are the truth. I've owned a few adapters for different consoles and they did the job nicely but I understand that some people like to own a dedicated stick for their console. If you are going with a stick from the Ps2 era, I would go with a Hrap2 just like Skate mentioned. That brook adapter coupled with something like a PS3 Virtua Stick High Grade would do you nicely.

For my older consoles I use a Hori RAP V3-SA that I gutted and installed a Brook Retro Board. I then have RJ45 controller cables for Dreamcast, Saturn, and PS1/PS2. Highly recommend modding a nice modern stick that uses real arcade parts. I have also used a Brook adapter to use my PS4 arcade stick on my Neo Geo MVS and it worked great too.
