I have a CMVS with a Jrok encoder in it (the one with S-Video model) and thinking of taking it out and replace with RGB output instead. May I know what kind of accessories I would need for RGB output other than the socket? And is there a guide on how to drill holes through the MV-1Fz casing? Thanks.

All you need is the socket and a Unibit for cutting holes. For Drilling the PCB you just have to check both sides are clear. I would use a ruler to measure if it's a tight fit for finding a place.

Also if you dont want to remove the jrok you can just install an on-off switch for the +5v going to the jrok to turn it off when using straight rgb.
