Apparently there exists an Asia AES bios. I'd like to know what is the difference with other region AES bioses?

Only Japan, Euro and USA BIOS regions exist, for either AES or MVS boards. Where did you read about Asia version? maybe they meant Japan version?

The only ask a differences I can think of PFF the top of my head are The Last Soldier (Korean Last Blade) and Samurai Salabi (Korean Samsho). These were their own games and didn't have their own bios settings, mainly for the regional differences.

I think 2 of my MVS mobos do say Asia in the menu. Pretty sure about this but maybe it was the heat of the moment.

My MV1-B has also Asia written on it.
It has nothing "asian" besides that. It's all in english.

It was part of MAME set of bios at one time, along with Japan AES bios. Did anyone try it?
